Fresh and Fruity Waldorf Salad

Serves 4


Protein – choose one of these:

  • 400 cooked chicken
  • 400g cooked lean meat
  • 4 hard boiled eggs
  • 4 x 85g cans tuna lite

Salad ingredients

  • 1 medium orange
  • 16 grapes
  • 2 red skinned apples
  • ½ cup chopped celery
  • ¼ cup walnuts
  • ¼ cup plain low fat yoghurt
  • 1 tsp lemon juice
  • 1 tsp lemon zest
  • 1 level tsp pesto OR 2 tsp  poppy seeds
  • Baby spinach or greens for serving


Chop the peeled orange into cubes and the unpeeled apple into cubes. Cut the grapes in half.  Combine the fruit, celery and walnuts together.  In another bowl combine the yoghurt, lemon juice, zest and pesto or seeds and then stir through the salad. 

Serve on a bed of baby salad greens with your choice of protein.

This salad needs to be served within 30 minutes of serving to prevent it going soggy.
