Tasty Vegetarian Salad for One



Choose any or all of the veggies below and prepare as desired.

  • Mixed greens

  • Red onion

  • Cherry tomatoes

  • Capsicum

  • Cucumber

  • Celery

  • Beetroot

  • Carrot


Place prepared veggies in a large serving bowl and top with 125g of cottage cheese and a few gherkin slices.

Drizzle with olive or avocado oil for a healthy lunch or dinner.
