Tofu Stir Fry

Serves 4


  • 300g packet firm tofu cut into bite sized cubes
  • 1 large carrot cut into thin sticks
  • 1 tsp crushed ginger
  • 2 level tsp crushed garlic
  • 1 large onion chopped finely
  • 1 small head broccoli cut into small florets
  • 1 medium courgette
  • 1-2 cups sliced mushrooms
  • 1 capsicum sliced
  • 1 packet Lee Kum Kee teriyaki sauce (from Asian / International section of supermarket)


Spray a large non stick pan over medium heat and add onion, garlic and ginger, cook about 3 minutes or until onion is soft.  Add sliced carrots and cook another two minutes then add the rest of the veggies.  Cook another 2 minutes then add tofu and stir well.  Add sauce, stir and cook over gentle heat about 5 minutes and then serve with rice and/or extra vegetables.
