Sweet and Sour Pork

Serves 4


  • 400g lean pork pieces (remove visible fat)
  • 1 cup canned pineapple pieces in natural juice
  • 1 medium red onion
  • 1/2 red capsicum
  • ½ green capsicum
  • 1 cup pineapple juice – from the can
  • 2 dsp tomato paste
  • 1 tsp crushed garlic
  • 1 tsp crushed ginger
  • 4 tsp Worcestershire sauce
  • 1 tsp beef stock powder
  • 1 1/2 Tbs brown sugar
  • 4 tsp malt vinegar
  • ½ cup cold water


Preheat oven to 160 degrees C.

Drain the pineapple and reserve the juice.  Chop onion and capsicums into chunks.

Combine everything, except the capsicums, and place in a covered ovenproof dish and cook for 1 ¼ hours.  Add the capsicums and cook a further 15 minutes.

Drain the sauce from the pan and while keeping the pork warm, place the sauce in a pan (without a lid) and reduce until thick and syrupy.  Add the pork and serve with additional veggies.
