Stuffed Pork Fillets
500g piece pork fillet
100g Philadelphia Lite cream cheese
10 prunes or dried apricot halves – chopped
1 teaspoon grated orange zest (optional)
Carefully slice pork fillet so that you can push it open (butterfly it), but don’t cut it right through to the bottom.
Mix the filling ingredients and spoon into the centre of the pork, then press the sides of the pork together and tie with string at intervals.
Place in a baking paper lined baking dish (for easy cleaning up!) and bake at 200 degrees for about 20-30 minutes, depending on the thickness of the fillet. Stand for 5 minutes then slice thinly into medallions.
Serve with a big salad or fibrous veggies.
