Spring Vegetarian Dinner


Per person


Base ingredients

  • 1/2 bunch asparagus
  • 2 eggs
  • 2 pizza mushrooms
  • Spinach, baby leaves
  • Parmesan - shaved
  • Olive or avocado oil for dressing (I used garlic infused avocado oil)



Place cooked asparagus on plate, top with poached eggs. Place baby spinach on plate, drizzle with oil and place pizza mushrooms on spinach leaves. Scatter shaved Parmesan over.
