- 1 cup of dry brown lentils
- 3 cups of boiling water
- 2 medium onions, chopped
- 1 medium carrot, diced
- 4 cloves of garlic, chopped
- 2 tsp cumin
- 2 tsp ground coriander
- 2 tsp turmeric
- 2 Tbs oil
- 2 x 400g cans of tomatoes
- ½ cup dried apricots, chopped and soaked in hot water for 10 minutes
- Salt and pepper to taste
Bring unsalted water to the boil, add lentils and cook for 20-30 minutes or until soft, drain.
Put oil into a pan and cook the spices, onion and carrot until soft (5-10 minutes), stir regularly to prevent burning.
Add the cans of tomatoes and season to taste.
Put a stick blender into the pot and mush up until smooth. (or put into a blender or food processor).
Add the cooked lentils and chopped apricots.
