Smoked Salmon Quiche
- Large bag of spinach
- 6 eggs
- 1 cup cream
- Salt and pepper
- 1 tsp dried mixed herbs, or fresh parsley (optional)
- 180g piece smoked salmon
- 1 cup grated Vintage or other full flavoured cheese
- 5 cherry tomatoes, halved
Steam spinach and drain well. Place in the bottom of a greased oblong dish. Break up smoked salmon and scatter on top of the spinach.
Beat the eggs, cream, salt and pepper and herbs (if using). Pour over the salmon, then scatter the mozzarella on top. Place cherry tomatoes on top and bake at 180 degrees C for about 45 minutes, or until just cooked.
Serve with green veggies or salad.
