Smoked Salmon Omelette



Per person

  • 2 eggs + 1 Tbs water, salt and pepper, lightly beaten together
  • 20g smoked salmon
  • 2 cherry tomatoes sliced
  • 20g feta cheese diced
  • Diced red onion
  • Baby spinach leaves


Spray a non stick frypan with baking spray and heat moderately hot.

Pour in egg mixture and as it just starts to set a little add the filling ingredients on one side. Cook a couple of minutes longer, until it lightly set and then fold the unfilled half of the omelette over the filled half. Turn heat down and cook another couple of minutes longer.

Serve with a side salad.
