Satay Chicken Skewers
600g of lean chicken breast cut into bite sized cubes
Skewers (if bamboo, soak in water for 20 minutes so they don’t burn)
5 teaspoons of peanut butter
1/3 cup low fat plain yoghurt
1 1/3 teaspoons sweet chilli sauce
2/3 tsp curry powder
Mix satay sauce ingredients together well then toss chicken pieces in the mixture and leave for 15 minutes or longer.
Thread chicken onto skewers and cook on BBQ.
Serve with a big salad.
