Salmon Frittata


Serves 6


  • 8 large eggs
  • 300g fresh salmon, deboned and pre-cooked
  • 1 bunch spinach
  • Medium onion, diced and pan fried
  • ½ head broccoli, chopped and lightly cooked
  • Asparagus,  lightly steamed, optional
  • 1 cup cream
  • Parsley – optional
  • Salt and pepper
  • Grated parmesan cheese


Whisk eggs, salt and pepper and cream together. 

Grease a baking dish and add half the spinach, cooked onion and broccoli, then half the salmon and repeat so that you have two layers of each.

Pour the egg mixture over the salmon mixture. Push the salmon mixture down so that the egg mixture is spread through the dish. 

If using the asparagus place on top and then sprinkle Parmesan over.

Bake at 180 degrees for about 30-40 minutes, or until the cheese is browned and the mixture cooked through.
