Pumpkin, Vegetable, Chickpea and Bean Soup

Serves 8 or more

Ingredients

  • 2 onions chopped
  • Few sticks of celery sliced
  • About 500g pumpkin cubed
  • 2 medium carrots chopped
  • 2 small kumara chopped
  • 2 x cans cannellini beans
  • 1 x can chickpeas
  • 1 x small can tomato soup concentrate + 3 x cans water
  • Can chopped tomatoes + 1 can water
  • 3 tsp smoked paprika
  • Salt and black pepper

Method

Cook all, then puree. Serve with plain low fat yoghurt on top.
