Four ingredient crispy pizza base
- 2 cups almond flour/almond meal
- 2 Tbs coconut oil melted (or butter)
- 2 large eggs
- ½ tsp salt
Put all the ingredients in a food processor and mix until a dough forms. You may need a little more almond flour if the mixture is too sticky. If you don’t have a food processor just mix the ingredients together manually and form into a ball.
Roll out between baking paper until evenly thin, it should take up most of your baking tray. Place the prepared dough, with the bottom sheet of paper still attached on to a baking tray. Prick with a fork and cook at 180 degrees for about 20 minutes, until golden.
Remove from the oven and top with your choice of toppings. I used tomato paste, dried mixed herbs, chopped red onion, tomato slices, capsicum and then scattered Parmesan cheese on top. Return to the oven and bake until cheese has melted and edges of the dough are crispy.
