1 cup of extra light olive oil
1 tsp crushed garlic
This is very rich and creamy and with having a whole egg in it and no preservatives you’d probably want to use it within a week. Keep refrigerated.
In a cylindrical container (like the stick blender ‘jar’) put 1 cup of extra light olive oil, 1 whole egg, salt and pepper and 1 tsp crushed garlic.
Place the stick blender in the container, right down at the bottom, and turn on for 20-30 seconds, don’t move it! After that you can move it up and down until it is blended. These steps are important for perfect, no fail mayo. You could add other flavourings to taste.
