Almost Instant Low Fat Chocolate Pudding
For 1 (Microwave)
1 tablespoon flour
1 tablespoon sugar (slightly underfill the spoon)
1 tablespoon cocoa (slightly rounded)
¼ tsp baking soda
Low fat yoghurt – about 2-3 tablespoons
1 tablespoon berries – frozen are fine (optional)
Few drops vanilla essence (optional)
Sift the flour, cocoa and soda, add the sugar and enough yoghurt to mix to smooth batter. Stir the berries in.
Place in a 1 cup ramekin (or similar microwave proof container) and cook on high for about 80 seconds. It may take longer – cook until the centre just loses it’s wet look, but don’t overcook. You can keep zapping it if it isn’t quite cooked at first.
