Low Carb Veggie Bake


Can be a main (serves 4), or a side dish (serves 6).


  • Broccoli – around 2 cups cut into small florets

  • Cauliflower – around 2 cups cut into small florets

  • 1 leek – sliced into thin rounds

  • Grated cheese for the top – about 2/3 cup



  • 500mls approximately of plain, unsweetened yoghurt (I used Gopala)

  • 3 large egg yolks

  • 80g tasty cheese, grated

  • 200g ham (optional) chopped up

  • 1 tsp wholegrain mustard powder

  • Salt and pepper


Place the prepared veggies in a large baking dish. Mix all the sauce ingredients together with a whisk, until well combined. Pour over the veggies. Scatter the additional cheese on top.

Bake at 180 degrees until the veggies are tender and the cheese topping is golden, around 45 minutes.

Serves 4 as a main meal, or if you omit the ham, then it would serve 6 as a side.
