Low Carb Vegetables


Select a good variety of colours from the following vegetables:

  • Asparagus
  • Beans (green, not broad beans or Edamame beans)
  • Bok Choy and other Asian greens
  • Broccoli
  • Brussel sprouts
  • Cabbage
  • Capsicum – use a small amount for low carb
  • Cauliflower – great for cauliflower mash and cauliflower rice
  • Celery
  • Courgettes (zucchini)
  • Cucumber
  • Eggplant (aubergine)
  • Garlic – use a small amount for low carb
  • Herbs
  • Kale
  • Leeks
  • Lettuce
  • Mung beans (and other bean sprouts)
  • Mushrooms
  • Onion (red onions for salad too) *use a small amount for low carb
  • Radish
  • Rocket
  • Silverbeet
  • Spaghetti squash-the yellow fibrous one
  • Spinach (remember baby spinach for salads also)
  • Tomato – use a small amount for low carb


Focus on above the ground veggies as they are lower in starch than below the ground veggies as a rule.
