Low Carb Garlic Bread

From ‘Ditch the Carbs’



  • 170g grated Mozzarella*

  • 85g almond meal

  • 2 Tbs full fat cream cheese

  • 1 Tbs crushed garlic

  • 1 Tbs chopped parsley

  • 1 tsp baking powder

  • Salt – about ½ tsp

  • 1 egg


Put all the ingredients, except the egg, in a large microwave proof bowl. Mix together, then microwave on high for 1 minute. (if using frozen cheese, make this 1 ½ minutes). Stir, then microwave on high again for another 30-60 seconds. Add the egg and mix together well, the mixture will be soft.

Place on a baking paper lined baking tray and form into shape, see photo above. Slash slices across the top.

Melt 2 Tbs butter with 1 tsp garlic and brush the top of the bread with this. Sprinkle with about 2 Tbs grated cheese – optional.

Bake at 220C for about 15 minutes, or until golden brown.

The bread is only about 3cm high, great for serving with soup.

*I keep bags of grated mozzarella and grated Parmesan in the freezer. They keep well for instant use, still frozen.
