Low Carb Crepes


Serves 1: Makes two thick or three medium thickness crepes.


  • 2 large eggs
  • 2 Tbs full fat cream cheese
  • 1 Tbs psyllium husks


Blend all together until smooth, then cook in a greased pan over a moderate heat.
Wait until the underside is cooked and the top is starting to 'dry' before flipping.

Fill with a savoury topping:

  • Cream cheese or sour cream
  • Various cheeses
  • Salad items

Roll up and enjoy!
