Low Carb, Crustless Chicken Pizza


Serves 4


  • 4 x medium chicken breasts
  • low carb tomato paste – choose the lowest carb one you can find
  • Dried mixed herbs
  • Diced veggies such as mushrooms, capsicum and tomato
  • Parmesan cheese


Pre-heat oven to 180 degrees and line a large baking dish with baking paper.

Place each chicken breast between baking paper and beat with a meat mallet or similar until the thickness of schnitzel. Be sure to beat each to an even thickness so that the whole breast cooks evenly.

Spread as much tomato paste as you need over the chicken to give an even layer, then sprinkle with dried mixed herbs. Pile the diced veggies on top, then sprinkle with Parmesan.

Place in baking dish and bake in pre-heated oven for about 20 minutes or until just cooked. They may take less time, depending on the thickness of the chicken; you don’t want them dry.

Serve with a big salad or some fibrous veggies on the side. These make great leftovers for lunch the next day, so do extras!

Tip:  If you line the baking dish with baking paper it makes cleaning up easier.
