Kumara and Cottage Cheese – Lunch for one


  • 120g kumara with skin on
  • 125g lite cottage cheese
  • 2 tsp sweet chilli sauce
  • Salad greens + other salad items


Wash and prick the kumara, microwave around 2 – 2 ½ minutes on high, or until tender, then split it open and stuff with the cottage cheese.  Pour the sweet chilli sauce over and place on a bed of salad greens.
