Felafels (Serves 4)


  • 400g can chickpeas
  • 1 medium onion chopped
  • Few sprigs of parsley
  • 2 cloves of garlic
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • Zest of ½ small lemon
  • ½ tsp salt
  • 2 Tbs flour


Process all the ingredients in a food processor or blender until fairly smooth.  Form into 4 patties and place in the fridge for at least 30 minutes to firm up.

Spray a non stick pan with cooking spray and cook patties over moderate heat for about 5 minutes each side, or until firm and brown each side.

These are nice served with yoghurt.  Mix plain, low fat yoghurt with finely chopped mint, freshly ground black pepper and some grated cucumber.  Chill until required.
