Easy Spicy Peanut Chicken

Serves 6

Ingredients

  • 900g skinless chicken meat cut into bite sized pieces
  • 2 medium onions, chopped
  • 1-2 sticks of celery chopped (optional)
  • 1-2 cups mushrooms sliced (optional)
  • 2 medium red capsicum
  • 4 level tsp curry powder
  • 2 tsp each of ground cumin and turmeric
  • 2 tbs peanut butter
  • 1 – 1.5 tbs sweet chilli sauce
  • 1 cup water
  • Plain, low fat yoghurt

Method

Spray a large non stick pan with cooking spray and sauté the chicken for a few minutes.  Add the curry powder and spices and stir.  Add the vegetables and cook until softened.  Add the peanut butter, sweet chilli sauce and water and stir well. Simmer for about 10 minutes then serve with yoghurt stirred through and with additional fibrous veggies on the side.
