Crustless Quiche

Serves 4


  • 2 tbs dried breadcrumbs
  • 75g shaved ham
  • 1 head broccoli (large) cut into small florets
  • Piece of pumpkin – about 300g (pre cooked in microwave until almost cooked)
  • 1 red capsicum
  • ½ red onion
  • 1 tsp mixed herbs
  • 1 cup grated cheese
  • 4 eggs
  • 1 cup milk
  • 1tsp Dijon mustard
  • Salt and pepper


Spray a 22cm quiche dish and dust with the crumbs.  Arrange veggies and ham over base then sprinkle with cheese.  Beat eggs, milk and dried herbs and mustard, pour over veggies.  Bake at 180 deg for about 40 minutes or until the middle is firm.

You could add any leftover veggies or frozen ones if you didn’t have fresh ones on hand.
