Serves 1: Makes two thick or three medium thickness crepes.
- 2 large eggs
- 2 Tbs full fat cream cheese
- 1 Tbs psyllium husks
- Unsweetened Greek yoghurt
Blend all together until smooth, then cook in a greased pan over a moderate heat.
Wait until the underside is cooked and the top is starting to 'dry' before flipping.
Fill with berries and unsweetened Greek yoghurt.
Roll up and enjoy!
