Chocolate, Apricot and Ginger Nut Parfait

Serves 4


  • Fresh apricots stewed without sugar, just a little water added, then mashed to a thick texture when cooked.

  • Chocolate ‘mousse’ made by combining 4 Tbs Weight Watchers drinking chocolate and 1 level tsp cocoa with 4 Tbs boiling water and mixing until smooth. Cool then add 6 Tbs lite, unsweetened Greek yoghurt and mix well.

  • 4 Tbs (additional) lite Greek yoghurt

  • 6 Tbs crushed ginger nut biscuits


Layer in tumbler shaped glasses:

  • Stewed apricots – about 2 Tbs

  • Choc mousse

  • Lite Greek yoghurt

  • Crushed gingernuts

You can blitz a whole packet of ginger nuts and keep the remainder in a container in the freezer.

You could use different stewed fruit such as plums or apples, but apricot and chocolate go so well together.
