Chicken With Cream Cheese, Pesto and Bacon
- Chicken breasts, with or without the skin
- 1 teaspoon pesto per chicken breast
- 1 tablespoon full fat cream cheese per chicken breast
- 1 rasher of bacon per chicken breast
Cut a slit horizontally part way through each chicken breast. Spread with pesto, then cream cheese.
Wrap a rasher of bacon around each breast and bake at 180 degrees until cooked. Depending on the size of the chicken breast it will take around 25-30 minutes. You may like to put them under the grill at the end to crisp up the bacon.
Serve with a large salad or veggies.
