Chia Seed Breakfast
Chia seeds are a great source of fibre, with each tablespoon of these tiny seeds containing 5.8g of fibre. That’s as much as 2 slices of many grainy breads contain. It is also a good source of vegetarian Omega 3, it is high in antioxidants and it makes a lovely creamy dessert or breakfast.
- 2 Tbs chia seeds
- 1 medium banana, mashed
- 2/3 cup low fat plain yoghurt
- 1/3 cup water
- Strawberry or peach slice for decoration
Mash the banana well, then add the seeds, yoghurt and water. Mix well and leave overnight. Add a little more water if too thick.
Serve with berries or a canned peach on top for decoration.
