Cheesy Veggie Bake
- 250g lite cottage cheese
- 4 eggs, beaten
- 390g can Delmaine Ratatouille in rich tomato sauce
- 400g can Cannellini or kidney beans, drained
- 2 tsp sweet chilli sauce
- ½ medium/small onion finely chopped
- 50g Mainland Noble (low fat tasty) or other cheese, grated
Place ratatouille, beans, onion and sweet chilli sauce in a small, deep, oblong baking dish which has been sprayed with non-stick cooking spray. Beat eggs and cottage cheese together and spread on top. Scatter grated cheese over and bake at 180 degrees for about 50 minutes, or until the cottage cheese and egg mixture has set and the top is lightly browned.
Serve with extra veggies on the side.
Tip: While the oven is on why not chop up pumpkin pieces and dry bake at the same time as the veggie dish.
