Cheesy, Tomato Chicken Breasts
- 4 chicken breasts
- 300g low carb pasta sauce (under 5g sugar per 100g) – I used IL Piatto Blue Ridge Smokey Pasta sauce from Farro, in the chilled food section. It is delicious and worth buying.
- Baby spinach
- Parmesan cheese
Slice chicken breast almost through horizontally and layer spinach leaves and pasta sauce. Close breast and do the same on top, i.e. place spinach and pasta sauce on top, then top with Parmesan.
Place in a baking paper lined baking dish and bake at 180 degrees for about 40 minutes, or until the chicken is cooked through. Simple, but delicious.
