Serves 4 - 6
- 2 medium onions
- 2 celery sticks
- 1 tsp minced ginger
- 3 heads of broccoli
- 1 litre of boxed chicken stock
- Rind of one lemon
- Salt & black pepper
Spray a large non stick pan with cooking spray and sweat onions, celery and ginger until onion is clear, not browned.
Add broccoli, lemon rind and stock and cook all until soft.
Puree in food processor until smooth and season to taste. You could serve this with a swirl of low fat plain yoghurt through it.
