Banana Pancakes - Gluten Free


Per person


  • 1 medium banana
  • 2 room temperature eggs


Mash banana in a bowl, add eggs and whisk well.

Spray a non stick pan with cooking spray and cook pancakes over a moderate heat.  Turn heat down if necessary.

Serve topped with lite Greek yoghurt and berries

  • You could add cinnamon or other spices to the batter
  • Room temperature eggs work best for thicker pancakes
