Low Carb Baked Veggies with Parmesan


Serves 4 - 6 depending on how big a serve you like!


  • 1 head broccoli cut into florets
  • 1/2 cauliflower cut into florets
  • 2 leeks, sliced
  • 12 Brussel sprouts
  • Olive oil
  • Himalayan salt crystals
  • Parmesan cheese - grated or sliced - about 100g
  • (You can use whatever low carb veggies you like, in whatever amount you like)



Put prepared veggies in a large roasting dish and pour olive oil over. Toss veggies to coat with oil.  Grind salt over and scatter Parmesan on top.

Bake at 190 degrees for about 45 minutes, or until veggies are tender. Turn veggies once or twice whilst cooking.
