Apricot Pork Fillets

Serves 4


  • 600g pork fillets

  • 12 dried apricots – chopped

  • 4 rashers of bacon

  • 300g bottle of Bit on the Side Spiced Apricot Sauce

  • ¼ cup water


Make a slit the length of the pork fillets, do not cut right through.  Place chopped apricots in the slit of the fillets.

Remove rind from bacon rashers and wind rashers around fillets to keep the apricots in.

Heat a non stick pan and brown the fillets on all sides.  Place in casserole and pour over the combined apricot sauce and water.  Cover casserole dish and bake 180 degrees for 30 minutes.

Stand 5 minutes then slice on the diagonal and serve with veggies.

Optional:  Microwave medium sized potatoes and or kumara, and pumpkin chunks until almost cooked then place in oven to finish off while the pork is cooking.
